Pumpkin Spice Cupcakes
Ingredients:
For the Cupcakes
1 box Spice Cake Mix
3 Eggs
1/3 cup Oil
1 cup Hank’s Pumpkin Spice Soda
For the Whipped Cream
2 cups Heavy Whipping Cream
1/2 cup Sugar
1/4 cup Pumpkin Puree
1 tbsp Cinnamon
Directions:
- Preheat oven to 350 degrees (F) and line your cupcake pan(s) with cupcake liners. Set aside.
- Combine all cake ingredients according to box instructions, subbing out the water with Hank’s Pumpkin Spice Soda.
- Place batter into cupcake cups and bake for 15-18 minutes.
- Once the cupcakes are done, remove them from the pan and allow to cool completely.
- While the cupcakes are cooling down, prepare the whipped cream.
- In a bowl, mix heavy cream, sugar, pumpkin puree, and cinnamon with a hand mixer until stiff peaks form.
- Pipe or spread whipped cream onto cupcakes and enjoy!
