Pumpkin Spice Cupcakes

Ingredients:

For the Cupcakes

1 box Spice Cake Mix
3 Eggs
1/3 cup Oil
1 cup Hank’s Pumpkin Spice Soda

For the Whipped Cream

2 cups Heavy Whipping Cream
1/2 cup Sugar
1/4 cup Pumpkin Puree
1 tbsp Cinnamon

Directions:

  1. Preheat oven to 350 degrees (F) and line your cupcake pan(s) with cupcake liners. Set aside.
  2. Combine all cake ingredients according to box instructions, subbing out the water with Hank’s Pumpkin Spice Soda.
  3. Place batter into cupcake cups and bake for 15-18 minutes.
  4. Once the cupcakes are done, remove them from the pan and allow to cool completely.
  5. While the cupcakes are cooling down, prepare the whipped cream.
  6. In a bowl, mix heavy cream, sugar, pumpkin puree, and cinnamon with a hand mixer until stiff peaks form.
  7. Pipe or spread whipped cream onto cupcakes and enjoy!
